Featuring legends like Manjit Singh Gill and Ajay Chopra, the event highlighted sustainability, culinary tourism, and the socio-economic power of traditional Indian cuisine.

The Department of Hotel Management at Manipal University Jaipur, in strategic collaboration with the Royal Rajasthan Chefs Society, executed a landmark event on Wednesday as the Manipal International Chefs’ Conclave 2.0 descended upon the campus. Centered on the pivotal theme, “Culinary Heritage of Rajasthan & Its Impact on Tourism Economy,” the conclave served as a sophisticated examination of how traditional gastronomy functions as a primary engine for tourism and national economic expansion. The proceedings commenced with a meticulous traditional welcome ceremony, incorporating the tilak and safa ceremonies alongside the symbolic lamp lighting and Saraswati Vandana, establishing an atmosphere of deep cultural reverence.

The official reception for guests and participants was led by Dr. Chef Sourabh Sharma, Head of the Department of Hotel Management, and Dr. Brajesh Kumar, Dean of the Faculty of Management, Commerce and Arts at Manipal University Jaipur. During his address to the distinguished assembly, Pro-President Dr. Karunakar A. Kotegar articulated a profound philosophy of food, describing it as an engagement of the Panchendriya, or five senses, which facilitates total satisfaction. He further asserted that food serves as an essential cultural carrier, bridging geographical divides and connecting generations.

The intellectual framework of the conclave was established by the renowned culinary expert Manjit Singh Gill, who advocated for the global recognition of Indian cuisine as a definitive pillar of the nation’s cultural identity. Celebrity chef Ajay Chopra, widely recognized for his role in MasterChef India, expanded the dialogue by emphasizing the critical intersections of food tourism and sustainability, noting that the systematic transfer of culinary expertise to the next generation is the fundamental requirement for industry longevity.

The event showcased a formidable assembly of international and domestic culinary leaders, featuring Vijaya Baskaran, Vimal Dhar, Sabyasachi Gorai, Ashish Bhasin, Akshraj Jodha, Nand Lal Sharma, Rajeev Goyal, TC Gokhan Kesen, Amey Marathe, Ravikant Pathak, Abhiru Biswas, Bharat Alagh, Sumanta Chakrabarti, Sangeeta Dhar, and Manjit Singh Ratoo.
